If You Never Tri, You'll Never Know!

Vegan Chocolate Chip Pumpkin Scones

What a mouthful right!? I eat mostly gluten free. My friend Heather is vegan (that's gluten free, dairy free, meat free, and basically deliciousness free).
I wanted to make us something yummy (we work together at the shop and by 2pm we are craving something sweet) but that whole vegan stuff is tough to work with!! I remember one time she was like, "Try this." and shoved "chocolate" in my mouth. She continued, "It tastes like dirt" (as she shoved it in). It did. Gross.
So, on a mission for gluten free, vegan, and delicious, I kind of made these up...

Ingredients:

Biscuit and Scone Mix (pictured above)
1/2 cup sugar
1 cup of coconut or soy milk (pictured above)
1/3 can of organic pumpkin pie mix/puree (pictured above)
1tsp of pumpkin pie spice
as many choc chips as you want (pictured above)

So I mixed all that stuff up with a spoon. Preheat oven to 375*. Dropped spoonfuls onto a pan (lined with parchment paper and sprayed with coconut oil) and shaped them accordingly (all scone like). Baked for 15 minutes.

Hey, they're DELICIOUS!! And gluten free. And vegan. WOOT WOOT!
