Super Easy No Bake Peanut Butter Cookies
My recipe will make about 16 small cookies. Double the recipe if you're more than two or making them bigger.
What you need:
1/4 cup of butter
1/4 cup of milk
1 cup of sugar
1/4 cup of peanut butter
1/2 tbs vanilla
2-3 cups of white oats, quick oats, old fashioned oats - whatever kinda oats you want!
In a saucepan, bring butter, milk, and sugar to a rolling boil. Let it boil for no longer than 1 minute.
(baking tip: if you over boil sugar, your cookies will be crumbly)
Remove from heat and stir in peanut butter, vanilla, and oats. Start with 2 cups of oats and add more to desired thickness. Remember, these cookies harden as they cool so you don't want your "dough" too stiff, but avoid runny as well. Basically, you want to be able to:
spoon the dough onto parchment paper to cool. You can make little cookies, big cookies, a sheet of cookie, or spoon them into any kind of mold!
For quick eats - set them in the refrigerator for a little bit. Otherwise, let cool for a few hours so they're firm and ready to dunk!!
