Artichoke Spinach Bresaola Grilled Cheese
I was inspired on Pinterest to make a spinach artichoke type something...
Please remember that I'm a little bit of this, a little bit of that kinda wanna-be-chef
Ingredients:
some Olive Oil
3 cloves of Fresh Garlic
1 cup of Spinach
Artichoke Hearts cut in 1/4th's
a bit of Cream Cheese (2-3TBS?)
a squirt of Mayo ~ the real stuff
a chunk of Butter
1 cup of Mozzarella Cheese
Salt and Pepper
fresh Bread - a French or Italian Baguette (one side buttered)
Bresaola or your favorite meat, or not.
What to do with all that ^:
Sauté your garlic and spinach in some olive oil.
Add artichokes. Add cream cheese. Add a squirt of mayo and a chunk of butter.
Melt in your Mozz cheese... stir stir stir. Salt and pepper too!
Meanwhile, slice your bread to your desired thickness. Butter one side and grill it (like grilled cheese!). Top it with the good stuff and instead of trying to flip these, just grill the one side of another slice of bread and put it on top.
*Note on mine, I used a small french baguette so they were more like sliders.
I recommend using a thicker baguette!!
