If You Never Tri, You'll Never Know!

Peanut Butter and Jelly Sandwich COOKIES

You know I don't beat around the bush with a recipe, so let's get right to it!
Recipe makes about 12 sandwiches (so 24 cookies). If you half it, use a small or medium egg.

1 cup peanut butter 
1/2 cup honey (I used Miss B's Local Honey - creamed, cinnamon flavor!)
1 large egg 
3 cups oats (I used gluten free oats!)
1 tsp baking soda 
Your fave peanut butter and jelly (AKA jam or marmalade) for the inside 

Preheat oven to 350°F. 
Line a baking sheet with parchment paper and set aside. 

In the bowl beat 1 cup peanut butter with 1/2 cup honey until smooth. 
Beat in the egg until well combined. 

Add the oats and baking soda (which ideally you already whisked together) and beat on low speed until just combined. 

Drop heaping (one-tablespoon'ish) sized portions of dough a few inches apart on the prepared baking sheets. Flatten the top of each scoop of dough with the top of your hand. 

Bake cookies for 7-8 minutes or until they are set and just start to crack a bit on top. 
Let cool on cookie sheets for a few minutes before transferring to a wire rack to cool completely. 

Once cookies have cooled completely, turn them all over and spread the bottoms of half with peanut butter and the bottoms of the other halves with jelly. Squish them together (gently!!!) to create a peanut butter and jelly cookie sandwich. Refrigerate. Or just eat them all!!!
