Beets for the win!

-Beets are a forgotten vegetable.
-Beets are a good source of naturally occurring nitrates, which are converted into nitric oxide in your body. Nitric oxide is perhaps most well-known for its benefits to heart health. Heart=Love!!

-Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas).

The betalain pigments in beets support your body’s Phase 2 detoxification process, which is when broken down toxins are bound to other molecules so they can be excreted from your body.

Tonight, Bruschetta w/Cheese, Beets, and Basil

Make It:
Mash together feta cheese (or goat cheese) and some Philadelphia cream cheese (I use the light kind). Set aside.
Stir together: chopped red onion, chopped beets (they gotta be soft, so either buy soft ones or Google how to soften a root), olive oil, balsamic vinegar, salt and pepper.
Slice a french or italian baguette and grill the slices (oven or stove top or grill)

Spread cheese mixture, top w/beet mixture. Top w/fresh basil (or chives or whatever you want to make pretty pictures). As Luca says, "Is this for me or for Instagram." HA!
